Even though we did not have any girls eligible for Lucia this year, we still had a great Festival. We still had a Lucia Court of 6 girls that served cookies following the smorgasbord meal. Our 4 young Star Boys assisted in clean-up after our meal.
This year’s meal consisted of the traditional Potatis Korv, Swedish Meatballs, Roasted Chicken, Ham, Rice Pudding, Lingenberries, many variations of both Cheesy Potato and Green Bean casseroles, Sweet Potatoes, Pickled Herring and Beets, Olives and a few Cheeses and Crackers. We also served fresh Swedish Rye Bread, made the day prior. We even had Lasagna, reminiscent of another event held at the church many years ago, Swedalinies. The Lucia Festival originated in Sweden, and it stands today as a symbol of light and hope to all of humankind.
